Snow Day + Hot Cocoa (Dairy-free, Vegan)

Nothing better than Hot Cocoa on a snow day!! We live in NC and rarely get much snow. But when we do, one of two things happen: #1. They’ll call for a snow storm,  the entire state shuts down, mass shortage of milk + bread ensues….and we get a total of 10 snowflakes. So ‘extra’, I know. What do you even do with just milk and bread anyways?? And then every six years or so we get #2: A beautiful dusting of 6-10 inches, turning our state into a Narnia look alike,  giving the weather man back his dignity and us a reason to make hot cocoa!!

Now before I share this incredibly easy, rich + creamy recipe with you, I am going to tell you a little bit about our, umm, snow day…experience. Down below you will see pictures of a family having the time of their lives in a beautiful winter wonderland. But I assure you, it’s all lies.

I’ll break it down like this: we hate winter. There, I said it! Now before you go on a rampage messaging me about how we need to be more ‘winter inclusive’, hear me out! I have literal tropical ocean water for blood. “That’s ridiculous.” you say? Then explain to me why ocean water drips from my eyes when I’m sad. Or when I work out, the same ocean water rises to the surface of my skin? I know, you may call them tears + sweat, but I know who I am and what I am truly made of – and it’s def not winter soluble!

Though he does not carry the same oceanic genetics as I, we thankfully, were able to successfully pass mine on to our children. Our oldest however, has shown signs of a genetic mutation. She was up, dressed and ready to play in the snow an hour before the rest of the family was even awake. Please send your thoughts and prayers as we navigate through this difficult time.

Dramatics aside! We layered up well, made it outside and were all smiles…for about 15 mins. A HUGE victory considering last year, our youngest immediately started scream crying as we stepped out the door and into her very first snow day adventure! I was also in tears, not because I was sad or terrified, but because of the 20 degree wind blasts that were trying to freeze my eyeballs out of my face. Not cool.

This year the sun was shining, the girls were laughing and making snow angels and I felt a strange sense of love for the beauty of the moment. Then my husband convinced me to join the girls in the joys of snow angel making. “You know, why not?” I thought. It seemed soft and inviting. Like fluffy glitter clouds longing to cradle me in their love. So I fell back into the snow, leaving all my inhibitions behind. I could hear my children cheer with excitement as I descended in slow motion into a transcendent universe of crystal powder.

For a moment I thought this was the day snow and I would at last, become united in heart, mind, body and soul. But no, I was quickly ambushed and betrayed by it’s stone cold heart + icy grip. I was NOT enveloped by a fluffy glitter cloud in a transcendent universe of crystal powder, but was swallowed whole by a horrible frigid beast trying to freeze all of my life giving ‘oceanic essence’! In an instant, my life flashed before my eyes. “Is this how it ends? In this cruel cold grave of deception?” Just as I was fading into eternity, my husband swept in to pull me from death’s grip. He then pushed me back down and laughed. I don’t hold it against him because he was obviously in a trance like state influenced by the dark powers of the White Witch.

Luckily the girls started crying due to the fact that their ‘sock’ gloves were no longer dry or keeping their tiny hands warm. (A little known fact: Children’s tears are the only way to stop a snow queen induced trance. You’re welcome.) I grabbed the little one as my husband came back to his senses. He carried the oldest as we all made made it back indoors, safe and sound. But just barely. Nothing the aforementioned Hot Cocoa could not remedy!

This Hot Cocoa is super chocolaty, creamy + has a perfect froth on top! It takes less than 5 mins to make and only uses 5 ingredients. Get ready to experience utter chocolaty bliss.

Ideally, you would use a frother (like this one, or this cheaper alternative) to get your nut milk to the perfect puffy texture we are looking for in this recipe. We do not have a frother, but we do have a high powered blender that did the trick! I’d imagine any blender could get the magic happening, but I am a little bit partial to our Vitamix! Simply toss in the nut milk and blend on high for a few minutes!

You can use any nut milk or coconut milk for this recipe, but our favorite milk of choice has been Silk’s Protein nut milk! Its a blend of almond + cashew with pea protein. This combo is a bit thicker than your average almond milk and makes our hot cocoa extra creamy. Coconut milk will also give you that thicker, creamier feel – and add that classic coconut flavor. It’s really really good too. But for this post, we are using our old faithful almond, cashew blend!

Hot Cocoa (Dairy-free, Vegan)

This Vegan Hot Cocoa is the perfect snow day topper! It's rich, creamy and hugs you all the way down.
  • 1½ cup non-dairy milk
  • 4 tbsp any non-dairy milk (separate and in addition to above)
  • 4 tbsp raw cacao powder or cocoa powder
  • 1½ tbsp maple syrup
  • ½ tsp cinnamon
  • ¼ tsp vanilla
  1. Using a frother or blender, froth the nut milk. This will take a couple of minutes and gives you plenty of time to prepare the chocolate!
  2. In a small saucepan over low heat, add the 4 tbsp of milk, cocoa powder, syrup, cinnamon, and vanilla.
  3. Whisk continually, until a thick chocolate sauce is formed.
  4. Once the nut milk is frothed, turn the heat off and pour the frothed milk into the saucepan. Whisk lightly until the hot cocoa is a light brown and mixed.
  5. Garnish with a little sprinkling of cocoa powder + cinnamon, then Enjoy!
